The difference between Arabs and Persians is that Arabs eventually destroyed the identities and languages of Egyptians, Berbers, Syrians, Lebanon, Palestine, Mesopotamia etc and so languages like Coptic, Aramaic, Syriac etc vanished and these peoples all become assimilated Arabs. Persians did not do that except in Parthia where they tried to wipe out Parthian language which contributed to their overall downfall as an empire.
Other Iranian languages like Sogdian, Bactrian and Khwarazmian died out and were eventually replaced by Persian by some freak chance of history, probably because Turks killed many of them and assimilated much of the others before they brought back Persian from the brink of extinction as a political language in Iran and so-called "Iranian lands" that previously had never been Persian speaking (like Tajikistan). The language change wasnt done by force unlike what Arabs did to others in the Middle East and North Africa.
