what sort of oil did you use on the noodles? Is that peanuts?

Btw, this looks like Thai food.....looks nice and healthy too

        +1
Nope this is defintely not Thai. I used olive oil for the sauce; the white things are actually beans, not peanuts. I'll post the recipe for you below!

          Tuscan Pasta with Spinach

          Ingredients:

          15-20 cherry tomatoes, quartered
          2 Tbsp olive oil
          5 cloves garlic, minced
          3.5 cups fresh spinach
14oz navy beans, rinsed and drained
          10 basil leaves
          Salt & pepper to taste
          Linguine

          Method:

          1. In a large pot bring salted water to a boil. Add linguine and allow to boil for 7 minutes (al dente).

          2. Meanwhile, heat a frying pan on medium. When hot, add 1Tbsp olive oil and the minced garlic. Allow garlic to fry for 2 minutes while stirring.

          3. Add the cherry tomatoes and basil leaves, shake the pan if necessary to prevent tomatoes from sticking to the pan.

          4. Add the navy beans and the remaining 1Tbsp olive oil and stir. Add all of the spinach and allow it to wilt.

          4. Drain the pasta and add to the sauce mixture. Mix well and serve immediately. Top with grated parmesan cheese and cracked black pepper.

I suppose if you wanted a richer sauce you could add a bit of heavy cream and parmesan and stir directly into the sauce. I opted not to as I like a lighter sauce with pastas. I also find that the liquid from the tomatoes accompanied by the starchiness from the beans prevents the sauce from being watery.

Looks tasty , thank you for sharing , I also made some using the same post by Admin Khan if I recall correctly , with few changes . The result was ok , but not as good as what I had outside in restaurants.
