Just the fact that I don't speak Pashto (whether script or transliteration) makes it troublesome for me to understand. I have very very basic limited knowledge and always have to whip out my dictionary when Nokia is involved.

      Gulab Jamun

      Ingredients:
      • 1 cup skim milk powder
      • 1/2 cup all purpose flour
      • 1/2 tsp baking soda
      • 2 Tbsp melted butter
      • 1/4 cup whole milk (coffee cream, 1/2 and 1/2 also ok)

      • 2 cups sugar
      • 1 cup water
      • vegetable oil

      Method:

      Sugar Syrup
      1. To make the sugar syrup, combine 2 cups sugar and 1 cup water in a large saucepan.
      2. At medium heat, allow sugar granules to dissolve. Add optional spices*, remove from heat and let stand.

      Gulab Jamun

      1. In a deep frying pan, heat the oil on just over medium heat (6). Allow oil to fully heat up. Test by sprinkling water droplets in, it should sizzle.
      2. When oil is hot, begin making the dough balls. In a medium sized bowl combine milk powder, baking soda, flour and butter. Add just enough of the milk to form a medium-hard dough. Form into balls and keep on wax paper.**
      3. Ensure that the balls do not dry out, cover with a damp piece of cloth or paper towel if necessary.
      4. One by one drop the balls into the hot oil. Once submerged do not touch until they rise to the surface. When risen, constantly agitate the balls by turning them over so they brown evenly.
      5. After 5 minutes of frying until a deep amber colour, remove from oil and drop directly into the sugar syrup. Allow to sit in syrup overnight, or several hours at minimum.

*Flavour enhancers to use individually: rose water, cardamom, orange blossom water, cinnamon, star anise, allspice.

**Note: When forming the dough balls, the mixture will be lumpy. Do not try and make them perfect spheres; the baking soda will cause them to puff out perfectly when they hit the hot oil

iftaari with no bread? how do you manage to survive?!

I am no bird, and no nest ensnares me.

non commercial would cost less if he was in charge himself which he plans on doing. right now it's n herat but soon it will be in qanadahar.
