This is a recipe for Ugra which is like a noodle soup with meat and beans that I learnt from my mom when I moved to London. Its mainly eaten in northern Afghanistan and Uzbekistan. This should be enough for 4 people.
2 table spoons mutton fat from a sheep's tail (very hard to find in the West, so use can use some kind of cooking oil instead, though it won't be the same).
1 pound mutton (real lamb meat from a "pasa/dumba", again very hard to find, you can use normal mutton or beef too), cubed.
1 small onion (chopped)
1 medium carrot (chopped)
7 cups "shorwa" or mutton/beef stock
1/2 cups beans (you can use either moong beans or those red ones)
1 medium potato (cubed)
2/3 cups noodles (boiled)
Salt and pepper (to taste)
Yogurt / "maasta" (optional)
Saute meat in fat (oil) until well browned. Add the onion and carrot then saute for 5 more minutes. Add "shorwa" and let it boil, then add the beans, cover and simmer for 40 minutes or so. Add the potato and cook for 10 minutes. Add noodles and heat through. Season with salt and pepper. Simmer for 5 minutes and serve with a spoon of yogurt on top, then eat it.
If it doen't look like this, you messed up.
