i dont know if this recipe has been posted but oh well...
    Bolani!

    First boil some aloogan (potatoes)

While the potatoes are boiling chop up some shne paiz (green onion/scallions)

make sure its chopped up nicely & add in some pudani (mint leaves)

thenn when the potatoes are cooked peel off the skin & cut it up intol small cubes

mix the onion & mint leaves with the potatoes
add in a little bit of malga (salt), a little bit of curry powder, a little bit of darnia (ground coriender seeds? i think :P) and some mrich (black pepper). (start with a little then after mixing it up you can taste it & see if you need more of something)

then mix all that up nicely

then you can start smushing the potatoes a little bit, but dont turn it into mashed potatoes ; (you should taste it now & check if you need any more spices or salt)

then mix in some tomatoes, i used about half a tomato for this amount :P

ok so now wrapping it up
    we use these

so take some of the potato &stuff and place it on the wrap like in the picture. make sure you dont use too much of the potato mix because then they will come out bulgy (fyi i kind of used too much in the picture and then took some away later so ignore the amount lol)

so then smush it down a little in a triangular form
dip your finger in some water and get all sides of the wrapper wet so that it will stick (like in the picture above; you can get the wrapper wet first and then place the potatoes in, whatever works best for youu :P)

so then just bring the corners together and press down on the edges and press down a little on the whole thing to get the air out and to spread the stuff on the inside a little more. then you can flip it over & press it down a little more

and thats thattt then just fry them

    and you're all good :D

(press it down with a paper cloth to get rid of the grease )

    & serve it with chakni

ok so first you cook the ground beef, then chop raw onions and mix it up

then place some in center of wrapper
dab your finger in water and make the edges of the wrapper wet

then bring each corner together, and pinch

      then
greese the bottom of the pot
or dip each dumpling in oil so bottom part is grease
(so it doesn't stick to the pot)
then place the dumplings in a steam pot and cook

      for the topping kema
      cook onions (until brown)
      then add tomatoes
      some fresh ginger (gratted)
      salt
      some tomato sauce
      coriender seeds (ground)
      meat masala lol

and add in the kema that you cooked for the stuffing

if you want to add qrrut to the topping yogurt...
first soften the qrrut by placing in water

then place qrrut in clean water, break it down and take out all the dirty stuff lol

then break it down some more and mix it up with a spoon so it looks smooth (but it will still be chunky)

then mix it in with the yogurt.
mix in some dried mint if you have any

then when everything is cooked & ready

put some yogurt at the bottom of the ghore (idk what you call it in english :P)
and put the muntu dumplings on top

then put the kema on top and more yogurt on top

ENJOY! & make sure you Share, che sawaab de woshi lol

      :D

Good job Gulalai! May a good man come for you :D

I actually do not use mint in my bolani, but i use a tiny bit of cilantro. Also tortilla bread is great for bolani, especially the big ones, after it is cooked you can cut it in half and more is available. But definitely look for the lard free ones.

Keep it up though *thumbs up*
