you have to fin and bleed sharks,( cut off tail) to get the urea/ammonia out. tastes ghastly if you don't. i learned that from experience as i did not know one has to bleed them, the first shark i caught.
i don't know that fish have to be bled but i do it and their blood also contains this urea but not so much.
