My mum uses the ready made wrappers , and they have to be fresh , and she makes the stuffing , you can make different sweet dishes using the same wrappers , easiest is (asafeer) which is not Qatayef but the same wrappers are used, you just need to fill each with white cream (or cheese used for sweets , I have to confim) and fold them without fully closing them , and add suger syrup on top , some pistachio/nuts if you want .
