    Plain Sponge Cake

    INGREDIENTS:
    Refined flour 250 gms

    Icing sugar 250 gms

    Butter 200 gms

    Eggs 4

    Vanilla essence ½ tsp

    Baking Powder 1 tbsp

    METHOD:

Cream butter in a bowl till soft. Sieve icing sugar and add a spoon at a time and mix in to the butter till all the sugar is used up.

Break eggs and separate the yolk and keep aside. Whisk the egg white till it makes a soft peak stage. Add the egg white little at a time into the butter-sugar mixture. Similarly beat egg yolk with vanilla essence in it. Do not too much of egg a time as the mixture will curdle. If the mixture begins to curdle, add little flour till it becomes even. And then continue adding eggs till used up. Sieve refined flour and baking powder thrice. Now add the flour into the mixture a little at a time but cut and fold method.

Grease a baking dish with butter and then dust it with a little flour. Pour in the mixture till the baking dish in ¾ full. Bake in a pre-heated oven (pre-heated for 10 minutes) for about 35 – 40 minutes or till done.

To test the cake whether done, insert a skewer or a clean dry knife in the center of the cake and remove it out. If the knife or skewer comes out clean then the cake it done.

Remove from the oven and leave in the baking dish for a few minutes. Invert it out on a wire rack and allow to cool before you store it in an air-tight container.

There are many methods, like wat about using melted butter compared to creamed butter??

And whisking the egg whites and yolk separately with the sugar?

Then sieving the flour into that mixture and butter

                  MARBLE CAKE

                  INGREDIENTS:
                  Eggs 4 - 5
                  Butter 300 gm
                  Sugar 300 gm
                  Flour 300 gm
                  Cocoa Pd. 3 tbsp

                  METHOD:

Crème the softened butter along with two third of sugar using a whisk.
Separate the eggs. Add the egg yolks to the butter/sugar mixture and continue to mix with the whisk until the preparation thickens. Add the sifted flour to avoid lumps. Quickly mix.

Beat the egg whites very firm. Gently add the slightly meringue firm whites to the dough. Divide the dough into 2 even parts. Flavour one half with cocoa powder. Keep the other one plain. Pour the uncoloured dough in a greased and dusted cake mould and cover with chocolate flavoured batter and mix with a fork lightly to get the marble effect when baked.

Bake in hot oven 180°C. Bake 30 minutes for mini marbled cakes and a good 50 minutes for a large marbled cake. When finished, check that the cake is ready by sticking the blade of a stainless knife in it. The cake is baked when the blade comes out dry. Unmould on a cooling rack or on the work surface. Leave to cool before slicing and eating.

Gulalai... you should just use a fork and try to mix the batter very lightly without touching the base of the baking dish.....
