  • Kalmyk chay - Khan chay

One of the teas I like is Khalmg style tea.
To prepare it You need the best a special tea prepared specially for it(gree tea does it also but doesn't have the really nice dark colour and specific aroma of Khalmg tea!
This is the tea used for Khalmg tea(it is pressed in big blocks and in difference to other teas contains not only leafs but stems of the teaplant):

To prepare it fist You need to cut of and pick in pieces a part of the block(that is quiet a difficult job, the block is very hard and you can even break a knife when the block resists You....):

To prepare the Khalmg tea in the very traditional way, no water is used(however today some use water in reduced quantities to make the boiling time less and to use les milk) - that is because Khalmg people lived in the dessert where water isn't available, so mostly they used milk as their main drink.

To prepare it you should put milk on fire already with the tea in it(never make the milk boiling with tea). Be carefull to watch when the milk boils reduce the flame and let the tea boil untill the colour turns into a "brown-violet".
For Khalmg people tea is a strict tradition with many rules, that aim to bind belief and daily life.
To make the taste better some Khalmgs add dried stems of the Zhuzgun plant:

And dry leafs of the Mongoltea plant:

When the tea has the right colour A piece of butter and s teaspoon of Salt are added, all is mixed in a king of Foamy, milky pastel violet tea,, filtered by a tea can.
Khalmyg tea is a salty tea - that may sound strange, but when You try it you will love its taste, it is the best thing to keep away from hunger and cold in the windy dessert winters.
Khalmgs drink their tea out of traditional cups:

Ա՜խ, ընկել եմ քար ու քարափ,
    Իմ սրբություն, ե՛տ արի, ե՛տ,

    Ես ծովակ եմ առանց կարապ,
    Իմ էություն, ե՛տ արի, ե՛տ:

    Ես անտառ եմ առանց եղնիկ

I drank this tea only once and I have to admit that it had a very unique taste. Unfortunately Khalmg tea blocks are not available here

Difficult to describe the taste, its unique, not similar to an Indian or Pakistani tea at all.

It is Drunk among Kalmyk people(A Mongolian tribe living in the dessert of Southeuropean Russia), Among Kazakh people(Kazakhstan), and in Mongolia.
I heard also Nogay people from Daghestan drink it, but i have no info bout it.
I tried it from Kalmyk(Khalmg) peoples hands and prepared it myself very often.
By the way the special tea used for Khalmg tea is known to reduce blood Cholesterol, what is important, as Khalmgs drink it with a lot of butter or sometimes even with Sheep fat.

        Իմ սրբություն, ե՛տ արի, ե՛տ,

By the way, today Khalmg tea is produced as instant tea, but I must warn, it has not at all the taste of the genuie product:

I have also forgotten to say that Horse or Goat milk are better to use for this kind of tea, as horse milk has less casein, and goat milk has finer casein than cowmilk.

            Interesting thread Arevapasht.

Would be interesting to try tea from Caucasus (Adyghe, Ossetian and Georgian for my part as you know why)

Well, the Caucasians havn't lets say a long tea tradition, tea came to our regions mostly by Mongols, Oghuz, Qypchak and Persians.
In Georgia however there are tea plantations, but Georgian tea(Turkish tea as well) havn't got long tradition of cultivtion and do not taste nice.
Typical caucasian dribks are infusions of other plants, some coffe-like drinks of roots, milk drinks (kefir, tan....).
Caucasian people, before Islamization(and some even now) were big wine producers and consumers, and in this sense Islam brang a big Change to some populations(mostly Daghestan and Chechnya). Others tende to consume till now a lot of wine(at leas many Adyghe I know do that unfortunately, In the Middle east however it will be different I suppose).
A lot of drinks are made also out of fruits and fruit juices.

Todays "hot drink" traditions of the caucasus however are mostly lost and replaced by Tea and Coffee.

Tea is drunk mostly without milk, sometimes with spices(mint, cloves...)
Coffe is drunk in the normal Coffee style(similarly to Turkey and Greece - Arabs in that sense have a much wider coffe culture.)
Hwever some local driks similar to coffee existed here, but aren't produced much- as they aren't such tasty and their production is quiet difficult.
