  • Be sure to use Cat Iron - I mean CAST Iron - pans!

By Kerri-Ann Jennings, M.S., R.D., Associate Nutrition Editor at EatingWellMagazine

Cast-iron skillets may seem like an old-fashioned choice in the kitchen. But this dependable cookware is a must in the modern kitchen. Cast-iron skillets conduct heat beautifully, go from stovetop to oven with no problem and last for decades. that there are some great health reasons to cook with cast iron.

[1. I took this one out because I feel it's completely wrong advice.]

    2. Cast iron is a chemical-free alternative to nonstick pans.
Another benefit to using cast-iron pans in place of nonstick pans is that you avoid the harmful chemicals that are found in nonstick pans. The repellent coating that keeps food from sticking to nonstick pots and pans contains PFCs (perfluorocarbons), a chemical that’s linked to [all sorts of bad things] PFCs get released—and inhaled—from nonstick pans in the form of fumes when pans are heated on high heat. Likewise, we can ingest them when the surface of the pan gets scratched.

    3. Cooking with cast iron fortifies your food with iron.
While cast iron doesn’t leach chemicals, it can leach some iron into your food...and that’s a good thing. Iron deficiency is fairly common worldwide, especially among women.

Cooking food, especially something acidic like tomato sauce in a cast-iron skillet can increase iron content, by as much as 20 times.

Even better perhaps are ceramics - they cook in thebest way.

Thanks so much, GYE !! That's really nice to hear.

        Arevapasht, yes.
There ARE cast iron interior pans with ceramic exteriors.
        Do you mean that?
        or complete ceramic ?
If the latter, please explain about them if you see this.

I prefer the cooking with ceramic as well; the heat conduction is more even.
I have a glass cook top and cast iron made pits in the glass.

1.How about Aluminium wares? Any health issues there?

            2. I suppose good old earthen utensils would be good too.

Dear Sher , I meant the complete ceramic used to cook in oven - as the temperature balance is much better.
                Frying is worst.
Actually the most healthy is not to cook at all.
But at least the temerature of hot water(100°C) is more natural than the one of hot oil(over 200°C), specially the sume oils can decompose.
