  • Landei / Londee

People in Afghanistan kill each other for this meat. I can see the reasoning behind it. Anybody else love this dish?

    Pictures coming soon.

nice try. landi is not dried in the sun but in freezing cold snowy winter weather. it will rot in the sun.

I am no bird, and no nest ensnares me.

non commercial would cost less if he was in charge himself which he plans on doing. right now it's n herat but soon it will be in qanadahar.

              Landee

              --
Landee is known for it's sticky, greasy nature. In order to make it tastier, my mother actually found a better way to prepare it, that is a little tedious, but makes the meat tender, not sticky, and is probably a lot healthier.

How to prepare Landee for eating:
              • Get salted & dried lamb meat (you have to make this yourself, do not get the store variety) and soak & submerge in boiled water overnight
              • Drain and wash Meat in warm water the next day; remove additional fat if neccessary
              • In a pressure pot, soften onions with olive oil, add garlic
              • Once Onions have softened a little, add meat, boiled water (to submerge meat) and pressure cook for 30 minutes
              • When meat is cooked, do not open, allow meat to cool in fridge for 24 hours allowing for fat to separate.
              • The next day, remove fat, but keep juices and meat in cooker and keep covered
              • Remove juices (minus the fat) and add to palao later; Prepare your palao to accompany it and enjoy!

There are a lot of variations. Some people cook the meat within the rice, but this makes the rice sticky. 99% of people do not remove the lamb fat and use it to cook with the rice. This makes the rice, along with everything, smell like Lamb. Some people do not eat it with palao and instead cook regular chalao (White Rice). I'm sure there are other varieties you guys can add to this thread.

You don't use snow, you use very cold and dry air to preserve the meat.

Do you and Niazmina have your Moor jaanee take the meat off the bones and blow air into your food if it's too hot?

Bahadur Khan, the method is located under the last photo I posted. I'm sure when the sisters here find this, they can provide you more recipes. I'm just a guy who knows how to cook only a few dishes really well.
