If you take two 1/2 glasses of rice then take 1 glass of mash and wash them separately.

Wash the Mash and put it in a pot with water to cook, enough water to help mash and brinj cook.

Boil the mash until the hardness of it is same as the rice’s, if the rice is soaked in water a head of time it will be much better. Once you realize that mash is same as UN COOKED rice add the rice and a bit of salt to the boiling water. Let them boil for a few minutes then get rid of the water and rinse them with cold water in chelow saf.

In a separate pot put some sugar and cook it until it is brown ( sare qaf byaya)…If you have meat stock then add it to the sugar ( you know how narm/sakht your mash o brinj is, so add the water regarding how narm/sakht you want it to be) let it boil for few minutes, add your salt and oil…( if you want, you can heat the oil separately then add it it helps make the rice Beryan)

Put the mash, brinj back in a deg then mix it with the aw o roghan, add some cumin powder at the top of it…cover it.

Let it cook on high gas until you see steam coming out of your deg or until the water is khoshk…

Dam bete on low heat bare 20 mins or so….

          Noshe jan

"Do not lose hope in adversity and complain that God singled you out for punishment, remitting others guilty of worse sins. Your present state could very well be His intent to elevate your spiritual station. Or He could just be testing your faith. Everyday that you persevere, you grow closer to perfection. Thus, your present despair may be the beginning of an infinite blessing". - Shaykh Abdul Qadir Jilani.
