How about traveling in South Afghanistan? Is there any chance to visit Nimruz, Helmand and Kandahar as a foreigner and get back safe?

Never been to those places, but I would recommend you to visit Helmand. Nimruz is safe to a degree. Kandahar city is 100% safe.

Yeah the people that inhabit those places include pomiri tajiks and the kyrgis. They kind of look like hazaras, i would love to visit it as well. There is another documentary like this: Lost on the Roof of the World: Afghanistan, by Frederic Larange - YouTube. This doc is even better than the wakkhan corridor one, gives a better perspective on wakkhan people, culture and landscape.

I would not recommend it unless you know someone that you trust that is from the area and knows the area. There are a lot of kidnapping for ransom and drug related criminality where the gov and police are involved.
