if by your files you mean the music then it wont get erased if you restore it.

shamlawar i used this program i think it was iRip but i'm not sure. When you use the free version you can save some (a lot) of your songs/movie but not all. You can try it....
as for you apps. If you click transfer purchases then itunes will save the purchased items on to your itunes account
