I am not quite sure what you already have but lets suppose you are trying to create a wireless interface between a remote RC joystick and a robot. It is actually very simple to interface a joystick and RC transmitter/receiver with an arduino. Id recommend you go with this direction.

Get a RC joystick like the one you see with normal RC toys, and get a RC transmitter/reciever and hook it upto your arduino..Ive done it in the past and the code was very simple.

I wouldn't complicate things by using a tablet, for future modifications you could put a gps chip on it and see how it goes.
