He cooks a lot though, dinner is on him most nights. He makes suji halwa every second night I think, and brings a fair share for my mother, who loves anything to do with halwa. The last time I felt like carrot halwa, my sister made it right away. She is superb at sweet dishes. DaZahroJaam.. 07-04-2010, 01:14 PM leytey is oatmeal porridge. it's also what my cousins used to call me when i was a kid. with a "khaam" for a prefix. :( abubaker 07-04-2010, 07:54 PM letai is a variant of halwa its made of white flower fried in allot oil and served with milk i believe/or ''sucha ghwaldi'' Dukhtar-e-Kabul 07-04-2010, 10:48 PM Oh dukhtar, be sure to share with us :) JAMALUDEEN 07-04-2010, 10:49 PM Everyone is going so crazy about Leytey like me:pullinghair: Dukhtar-e-Kabul 07-04-2010, 10:51 PM Everyone is going so crazy about Leytey like me:pullinghair: I still don't know what it is.:angel1: abubaker 07-05-2010, 06:16 AM Leytey my parent said is something we make when a new baby is born. thats shera lol spogmai shaglay 07-05-2010, 01:33 PM Feroza Banu i had doubt about CarrotHalwa... how its usually made is using milk, and sugar... but while cooking it there is a lot of moisture... milk, sugar leaves water and also carrot has a high moisture content... all this moisture needs to dry up.... but it takes so long that the halwa turns a little dark than its natural colour.....which is then not very appealing when cooked finally than the lovely bright colour of the usual halwa... can u help Feroza_Banu 07-06-2010, 01:57 AM ^salam alaikum :) I don't understand why the halwa would turn a little darker than normal. i do understand that there is alot of moisture because of milk, sugar and carrots itself but if u just let it cook and keep stiring it after every 3 to 4 minutes it should be ok. it does take a long time. just make sure to not let the bottom of the pot stick and burn the carrot. one tip to remember is that: u don't have to use ALOT of milk... u can use little milk enough for the carrots to be done and mostly use cream in it for the flavor. the only reason people add milk alot is for its fat content.. u can reduce milk quantity and use cream. u can even add oil in it. what type of carrots are u using? Feroza_Banu 07-06-2010, 02:13 AM ^inshaAllah soon!... spogmai shaglay 07-06-2010, 07:32 AM ^salam alaikum :) I don't understand why the halwa would turn a little darker than normal. i do understand that there is alot of moisture because of milk, sugar and carrots itself but if u just let it cook and keep stiring it after every 3 to 4 minutes it should be ok. it does take a long time. just make sure to not let the bottom of the pot stick and burn the carrot. one tip to remember is that: u don't have to use ALOT of milk... u can use little milk enough for the carrots to be done and mostly use cream in it for the flavor. the only reason people add milk alot is for its fat content.. u can reduce milk quantity and use cream. u can even add oil in it. what type of carrots are u using? walaikumassalam awo manana Feroza Banu....its the normal juicy carrot i use... and also can khoa/mawa be used instead of milk or can condensed milk be used? some suggest addition of colour but i dont want to use artificial colour in food..... looking forward for more tips from u.. u and i share a common hobby....:) Feroza_Banu 07-06-2010, 04:11 PM ^yes you can use khowa.. and condensed milk too... hmmm if u are using the regular carrot it shouldn't turn dark... it did turn light in my case... and my mom suggesting adding food coloring and i refused... i don't like adding artificial stuff too... this is sooooo exciting... i am so glad i have someone with the same hobby as me... Feroza_Banu 07-06-2010, 04:25 PM ^oh my bad... i missed this one... i am so glad that its ur hobby too *kiss* Feroza_Banu 07-06-2010, 04:48 PM ^na pahezham... ta mata suggestion raka... chishi pakha kam? She says i didnt boil it in oil.. i boiled it in water.. did i make a typo? lol I just meant to boil the potatoes so its done and ready to be mashed :) Oh and as far as tabakhai is concerened, It came with a set of Daig from Kitchen Aid. You can refer to this as pan cake pan. Whites make pan cakes on this but if u look in afghan stores you can find it there.. some american stores like ross have them too. Feroza says: Ya you are right i fried the onion and salantro in oil but i really used little oil just for the sake of the onions to be friend because the raw onion will not taste as good.. the best way is to use as much less oil as possible.. keep imagining says: (AnGaaR) about the rice: Espaseiba and so sweet of u .. she says Zma weenai.. I do enjoy cooking!... good for my husband lol Feroza_Banu 07-20-2010, 05:43 PM ^... my sweet Jasmine :) Sheenka 07-20-2010, 06:50 PM ^ u r absulately right Iqra 07-20-2010, 07:04 PM Food sounds so good :cryy: Sheenka 07-20-2010, 07:12 PM iqra llolz Iqra 07-21-2010, 01:12 AM iqra llolz I hadn't had food the whole day, alhamdulillah had some now =) Me you, Mayana and Feroza need a girls day out. lol so she can cook for us!!! Too much religious and ethnic bias makes me mentally exhausted. Wos no dase sha sheen chai sara da yow dwa dana yell ra josh ka.. Saifullah 08-08-2010, 05:38 PM THE CAKE RECIPE for that cake i showed... It doesn't matter if its not exact measurement but just get it close to it... 150g Plain flour 30g cornflour 1 teaspoon baking powder 175g castor sugar 175g melted butter 4 eggs (1 teaspoon vanilla extract if u want)... The way to do this... Step 1: Get two bowls, in one put the 4 egg whites with 2/3rd of the sugar In the other bowl put 4 egg yolks with 1/3rd of the sugar Beat each one with an electric mixer, till the whites make a peak..and when yolks turn into light yellow colour and mixed properly Step 2: Combine the egg yolks and egg whites with spoon Step 3: Sift all the dry ingredients (flour, cornflour, baking powder) and mix with spoon properly Step 4: Add the melted butter and mix till all ingredients are combined and if u want add the vanilla extract... I used a convection oven, at 170 degrees for around 30 minutes or more....if u using standard oven increase the temperature to maybe 180....and check if cooked by putting a knife through the middle it should come out clean Feroza_Banu 08-18-2010, 02:57 PM I will be making rot (afghan rot) inshallah and i will post the recipe. Hey Guys... i just added Halwa there... please go check it out! and give me ur feedbacks and ways to improve it. DaZahroJaam.. 09-30-2010, 01:37 AM that is not how i make my halwa... :hmmm: doesn't frying the sugar for it like that make it taste slightly bitter? Feroza_Banu 09-30-2010, 01:48 AM ^not at all. just dont let it become veryy dark... once it about cherry brown add in the sooji and water/milk. it brings out the color so u don't have to over fry the sooji which could possibly make it taste bitter. DaZahroJaam.. 09-30-2010, 02:07 AM i have been frying the semolina and sugar together for as long as i can remember. i will try this next time and see what happens. thanks for lesson! Feroza_Banu 09-30-2010, 02:16 AM ^my older sister makes halwa the way you do... yes try this one and see... let me know how it turned out ur welcome  thankful85 10-05-2010, 07:17 AM Ok this was delicious halwa! I usually don't even like halwa made with sooji but this was so good. Very different from the how my mother in law makes it. Their halwa is grainier ... this has a completely different texture. Feroza_Banu 10-06-2010, 12:34 PM ^I am so glad u tried it and u liked it... yay!... I have had the grainier halwa too but i like this texture better because i feel like its the halwa is cooked!... Mr.Niazi 12-14-2010, 03:05 PM thanks for posting recipes.. Sheenka 12-14-2010, 04:12 PM Salam alaikum… Let’s make halwa. Halwa is made differently by everyone. You can cook it different ways. Today I would like to share this recipe I use to make halwa and it turns out very delicious. I use dried fruits because I really like dried fruits in halwa. This is what you need: Use a Glass for measurement and keep using the same glass when measuring the flour (sooji), sugar, and oil. 1 Glass Sooji Flour 1 ½ Glass Sugar (Full glasses, or you can add more later on if you desire) ¾ Glass Oil. Make sure u use enough oil. 2 cups of mixed dried fruits. (Green raisons, pistachio, almonds). Rose water (1 table spoon). Cardamom. 4 glasses of water (u can use 4 glasses of milk too instead of water, it comes out so good with milk) How to make: Take one glass of Sooji Flour in a bowl and add in 4 glasses of water or milk. http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102114.jpg http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102112.jpg Take a pan and add oil. This is the glass I used. http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102116.jpg http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102117.jpg Let the oil temperature rise and then add ½ glass of sugar. Don’t stir don’t mix, don’t touch. Just let it cook in oil to change its color. Like this. http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102119.jpg http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102120.jpg http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102121.jpg Now in hot oil pour the sooji that you soaked in 4 glasses of water. http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102122.jpg Mix it. http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102123.jpg Keep stiring it every two minutes and let it cook http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102124.jpg Add the dried fruits when u see that it is almost cooked. http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102115.jpg http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102125.jpg Add cardamom and rose water. http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102126.jpg http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102127.jpg When you see all the water has evaporated, and halwa is sticky put it on dam on very low heat http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102128.jpg Result: http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102129.jpg I served with Parata: http://i195.photobucket.com/albums/z247/AfG2KaBuL/Halwa/290820102130.jpg Tips to remember: Be very careful when pouring the sooji soaked in water in hot oil. Don’t burn urself. Keep stirring it very often to make sure the bottom of the pan doesn’t burn. Keep it for dam only about 15 minutes on low heat. Add in shredded coconut for extra flavor how comes the final product dont look like halwa? Ghilzai 12-14-2010, 04:25 PM ghilzai Feroza is going to kill you for starting a discussion in this thread.
