Afghan Kebabs are the best. I have tried kebabs from other countries but none can match our kebab. Iranian kebab is good, but its dry. Same thing goes for Turkish and Lebanese kebabs. What I like about Lebanese kebabs its the garlic paste that they use to bring on the side. Unlike kebabs from those countries, Afghan kebab tend to be juicy and full of flavor.

Fully agree the tenderness of Afghan seekhi kabab is not matched by others. The secret is the onion juice marinade.

I have my own recipe: first lemon, then I use a seasoned homemade Spanish oil (garlic, rosemary, black pepper, chilly, etc) and salt. Fire is key for a good kebab. If its too strong, kebabs will get burned. Meats needs to take its time in order to be juicy and tender.

Before I used also onion juicy and Greek yogurt. Even vinegar sometimes, but its not recommended.

^ Indians kill everything with too much masala. Sometimes you just need to chill. Anything other than good old garlic, salt and pepper, ruins kabab.
