View Full Version : Meatballs With Noodles Tossed In Yogurt

This was for lunch yesterday at my place (and bolaani/peeraki, which you've also got a thread of, I shall check out in a bit). We make it a tad different though. And the best part is the Qurut (Qoret), if we don't have any, then yes, the subsititute is yoghurt. I can't have much of this though, I find you get filled easily, but are hungry minutes later. I don't mind cooking it, but eating it, I prefer something else (if available, if not, then this it is).

We make it very different. I reread the recipe just now, and there is a lot of ingredients missing (not to say this recipe is wrong, but compared to how I have grown up eating it). Chickpeas and lentils are a must in ours. We don't use egg noodles or sundried tomatoes either. I have noticed the Persian noodles are closer. But they add a lot of herbs and greens. They also add some sort of flour, either rice or corn, to thicken the consistency, but we don't. The noodles itself do that part. And again, kashk/whey/qurut/qoret is a must. That is really the only part I look forward to. Yusufzai, the least I could have done was a pic, should have yesterday ...
Overall, preparing it takes minutes ... (well, you know what I mean). Especially if you know your kitchen shortcuts ;)

Heyyy, it's just been a few hours you asked. Remember student life has its demands too. Production Week this week, so a no no definitely can't promise anything this week. Oh and folks (Darkwitch esp), the Qabili I promised this weekend, I wasn't able to (health went down, a bit too much). InshaAllah, I plan sometime soon, and no, I (InshaAllah) will not break my promise. And for our visually enticed members, lots of pics too.
And the thread, erm, it wasn't my recipe anyway ... I can give you my own and we can title them Mesbah's Recipe #1, Mesbah's Recipe #2, but I think it might just end at number one. =D

* 2 pounds ground beef
* 1/2 teaspoon ground cinnamon
* 2 teaspoons ground coriander
* 1 teaspoon ground turmeric
* 1 pinch cayenne pepper
* salt to taste
* black pepper to taste
* 2 cloves garlic crushed
* 1 tablespoon vegetable oil
* 1 spanish onion finely chopped
* 6 large ripe plum tomatoes core -- peel, chop
* 4 sun-dried tomatoes finely chopped NOODLES
* 1 pound fresh fine egg noodles in Asian markets
* 1 1/2 cups plain yogurt
* 2 cloves garlic finely chopped
* 1/2 cup fresh mint chopped
For the meatballs:
In a bowl, combine the beef, cinnamon, coriander, turmeric, cayenne, salt, pepper, and half of the garlic. With clean hands, mix thoroughly, then shape the meat into 3/4-inch meatballs. Set them aside.
In a large, flameproof asserole, heat the oil, add the onion, and cook over low heat for 10 to 15 minutes or until it is very soft. Turn the heat to medium-high and add the meatballs. Cook, turning them often, until they lose their pink color.
Add the plum tomatoes and remaining garlic. Cover the pan, turn down the heat, and simmer gently for 10 minutes. Add the sun-dried tomatoes, salt, and pepper and cook the mixture for 5 minutes over low heat, stirring once or twice.
For the noodles:
Bring a large saucepan of water to a boil. Add the noodles and cook for 2 to 4 minutes or until they are tender but still have some bite. Drain the noodles and transfer them to a bowl. Stir in the yogurt, garlic, and salt. Toss thoroughly and transfer to 6 wide bowls. Spoon meatballs around the edges of each bowl of noodles, add the mint to the center and serve at once.
